Legendary Chicago Bar Joins Alinea in 20th Anniversary Tour Appearance in Las Vegas
LAS VEGAS, NV (March 27, 2026) – The Aviary, an award-winning craft cocktail bar by renowned chef Grant Achatz, announces a landmark residency at The Vault, joining Alinea as part of a special anniversary collaboration at Bellagio Resort & Casino in Las Vegas. This will be a rare moment where two worlds of mixology-focused hospitality meet: The Aviary, The Alinea Group's acclaimed bar, known for pushing cocktails beyond the glass with dramatic presentations, unexpected ingredients, and a sense of theater, along with The Vault, an exquisite bar and lounge with an intimate setting that will naturally heighten the experience.
Reservations for The Aviary’s signature experience --a cocktail flight featuring three signature cocktails with paired food bites -- are now available and may be secured online. The cocktail residency will take place May 1 – 31 (Wednesday - Sunday), with a focus on curated selections of The Aviary’s most celebrated and visually striking offerings. A limited à la carte menu featuring classic Aviary cocktails, along with The Vault’s regular menu, will also be available for walk-in guests.
