Iron Chef Masaharu Morimoto Rolls Out New Vision Harmonizing Tokyo & Las Vegas Cultures

LAS VEGAS (December 1, 2025) – Masaharu Morimoto, famed chef and star of Food Network’s “Iron Chef America” and “Iron Chef Japan” has reimagined Morimoto Las Vegas at MGM Grand with a new Japanese dining experience emanating the energy of Tokyo’s famous nocturnal scenes. The restaurant is now open and welcomes diners with a whole new look and feel, from sleek design and new menu items to an elevated cocktail program.

Guests arrive through a glowing portal of Japanese playful text, inspired by the neon heartbeat of the Shinjuku District, and are greeted by the playful backbar design of Japanese culture and Chef Morimoto’s personal message. The next standout space is the sushi bar, backlit with Japanese brushstrokes of magenta, vermillion and electric violet. The main dining room blends visual cues of Tokyo’s rain-slicked streets with charred wood that nods to traditional Yakisugi craftsmanship. Lantern-lit tables balance the restaurant’s high-energy with a soothing and jovial atmosphere for dinner.

A symphony of handrolls, sashimi, Teppan and wagyu steaks celebrates Morimoto’s vision to balance the breadth of Japan’s culinary culture with the immense flavors of the Western kitchen. Highlights include:

  • Land & Ocean Roll: Smoked sushi roll with wagyu beef, sweet shrimp, crab, sweet shrimp and tobiko.
  • Chef’s Combination Sushi: Iron Chef’s famous “Stained Glass Window” technique offers customizable rolls with a variety of fresh fish and other ingredients.
  • Pork Sticky Ribs: Morimoto’s special ribs preparation featuring sweet chili and hoisin sauce.
  • Lobster Bao Bun: Pillowy bao filled with juicy lobster tail and a spicy aioli.
  • Teppanyaki Bar: Live iron grill preparation of luxurious meats, seafood and vegetables customized to order with add-ons of yakisoba noodles and foie gras. 
  • Dessert Bento Box: Assortment of mini desserts to share, including hazelnut tiramisu, strawberry cheesecake, coconut panna cotta, pistachio profiterole and yuzu meringue tart.

The new cocktail collection enhances iconic drinks from around the world with Morimoto’s favorite spirits, syrups and juices, creating concoctions that balance the comfort of the familiar with the surprise of the unexpected.

  • Emerald Dragon: Peach Soju shaken with midori, yuzu juice, lime juice and yuzu white peach soda.
  • Morimoto Kofu “Old Fashioned”: Iwai Japanese whisky combined with Kuro Aato and Japanese brown sugar.
  • That’s The Tea: Haku vodka stirred with ceremonial matcha, lemon juice and mint.
  • Hibis-Kiss: Flecha Azul reposado mixed with yuzu juice, hibiscus and orange liqueur.
