Three-night special event blends modern innovation and liquid history
for a premier cocktail experience
LAS VEGAS, NV (September 17, 2025) – The Vault, Bellagio Resort & Casino’s exclusive cocktail bar dedicated to “drinking liquid history,” will host internationally acclaimed Overstory for a three-night cocktail takeover in Las Vegas. The pop-up will take place September 23-25 as the country’s best restaurants come to the city for North America’s 50 Best Restaurants ceremony. Overstory’s award-winning team will bring their creativity from New York City to The Vault, delivering an unparalleled experience at every touchpoint.
Guests will enjoy a special Overstory cocktail menu featuring drinks such as the Guava Crush with mezcal, strawberry, guava, lemongrass, lime, and sumac; the In the Clouds with whiskey, Earl Grey, vanilla, champagne, and Clarified Milk; and the Terroir Old Fashioned with reposado tequila, Palo Santo, and Tilden salt. The Vault’s signature cocktail and small bites menu will also be available.
The experience will be led by SAGA Hospitality Group Bar Director Harrison Ginsberg, who oversees operations for Michelin-starred Crown Shy; two Michelin-starred SAGA; and Overstory, a World’s 50 Best Bar. Ginsberg joins MGM Resorts International Executive Director of Beverage Craig Schoettler, formerly of Alinea and The Aviary, in curating this cross-coastal exchange of ideas, flavors, and hospitality.
