Master Sommelier Will Costello Returns to Beau Rivage Hosting Bien Nacido Wine Dinner
Bien Nacido collection to be featured in Stalla Dec. 4
BILOXI, Miss. - Beau Rivage is pleased to host a six-course wine dinner on Dec. 4 featuring Will Costello, Brand Ambassador and Master Sommelier of Bien Nacido & Solomon Hill Vineyards in Los Olivos, California.
Costello was named one of Wine & Spirits Magazine’s “Top New Sommeliers 2013.” Worldwide, only 249 men and women have earned the title Master Sommelier, of which 158 are American. Costello is a Master Sommelier by the American Chapter of the Court of Master Sommeliers and passed with Distinction the Advanced Certificate of the Wine and Spirits Education Trust. Costello has competed in numerous wine-related competitions including The Court of Master Sommelier’s TOP/Somm, The Chaine de Rotisseurs “Young Somm Competition,” the Ruinart Champagne Challenge. He is an educator for New Zealand Wines and educates at the Society or Wine Educators National Conference yearly. Costello is frequently included in The Somm Journal, Gourmet, Wine & Spirits Magazine, Eater National Publications.
Bien Nacido is one of the hottest wineries on California’s Central Coast, crafting a superb collection of wines from its historic Santa Maria Valley vineyard, which can trace its roots back to 1837. Bien Nacido Vineyards and Solomon Hill Vineyard is one of the only family-owned wineries in the Central Coast of California.
During the 1970s the Miller family planted Bien Nacido Vineyards in Santa Barbara County. Since that time, winemakers throughout California coveted the fruit from this singular piece of land. Heavily influenced by the nearby Pacific Ocean, Pinot Noir, Chardonnay and Syrah have found great expression. The terroir of Bein Nacio Vineyards is a combination of rocky soils, cool climate and a staff that works the vineyard daily.
The Solomon Hills Vineyard was planted to Pinot Noir and Chardonnay in the late 1990s and found its tenor early among talented winemakers who found its vibrant, youthful flavor profile exhilarating, and at times, profound. Solomon Hills Vineyards are composed primarily of ocean derived sandy loams. The western-most vineyard in the Santa Maria appellation, it is the coolest of all vineyards in the growing region. With the Pacific coastline only miles away, a constant maritime influences results in wines of precise acidity, bright fruit and an inherent elegance.

Five specially selected wines from the Bien Nacido and Solomon Hills collection will be paired with a six-course dinner prepared by Beau Rivage Executive Chef Kristian Wade from 6-9:30 p.m. in Stalla.
