Cuisine Inspired from the Supper Clubs of Eras Past Take Center Stage at Bellagio’s New Fountain-side Dining Concept

LAS VEGAS (Dec. 30, 2019) – Vanilla-smoked chocolate cigars, towering seafood displays and the world’s finest cuts of meat will greet guests dining fountain-side at The Mayfair Supper Club opening at Bellagio on New Year’s Eve. The Mayfair will satisfy Americans’ appetite for the extraordinary through a culinary program that transports guests to the glamorous supper club world of yesteryear when music and cuisine intertwined for an unforgettable, all-night experience.  

“To honor what made New York’s supper club scene in the early to mid-1900s so special, we refined menu offerings from those establishments to present contemporary twists on Classic American cuisine,” said MGM Resorts International Chief Hospitality Officer Ari Kastrati.  “Dinner at The Mayfair will be just as fun as the entertainment as both the culinary and production teams work together to deliver an experience that awakens all of the senses.”

Highlights from The Mayfair’s menu include:

  • The Opening Act – Indulgent appetizers welcome guests to the show, starting with the Wagyu Handroll with Caviar layered with horseradish cream, tonkatsu sauce and a glittering gold leaf. The Mayfair packs its Scallops with flavor, baking them in-shell with black truffle and seaweed butter sourced from Normandy. 
  • The Main Event – Headlining the evening are quintessential American entrees prepared tableside with world-class ingredients like the Mishima Farms Wagyu Prime Rib, which is slow roasted for seven hours. The Dover Sole Veronique, deboned in front of the guest, is finished with a brown butter sauce, champagne and fresh grapes.
  • The Grand Finale – The Mayfair’s curtain call features whimsical delights and visual extravaganzas exemplified by The CIGAR, an edible chocolate and hazelnut cigar showpiece that arrives vanilla-smoked under a glass cloche.
  • The Supporting CastThe Mayfair introduces theatricality to American classic cocktails such as the Lemon Drop, which is poured into a citrus bubble that pops and releases scents that enhance the flavors of the drink. Additionally, three original versions of smoked Old Fashioneds, including one with a ginger-infused maple whiskey, highlight the cocktail menu.
