Situated in the center of the Las Vegas Strip, Primrose is a South of France-inspired restaurant featuring an intimate all-day menu with an emphasis on open-fire cooking. Primrose marks the first phase of the transformation of Monte Carlo Resort and Casino to the much-anticipated Park MGM hotel, a collaboration between Sydell Group and MGM Resorts International.

Located steps from the Park MGM lobby, the restaurant is designed by interior designer Martin Brudnizki, whose celebrated restaurant work includes The Ivy, Le Caprice and Annabel’s in London. With a distinctively residential feel, the restaurant evokes a series of rooms in a country house leading out to a lush garden and terrace inspired by the French Riviera - including the warm and thoughtfully curated Drawing Room and the park-inspired Dining Room, complete with custom park bench seating and a striking photographic mural portraying harmonious moments in a park.

The talented culinary team uses fresh seafood and vegetables to highlight the refined yet approachable menu at Primrose, while a custom-built wood-fire grill utilizing peach wood, almond wood and mesquite charcoal creates bold flavors for standout items such as Fried Chicken Provençal and Bouillabaisse Soup.

Fresh Provence-inspired cocktails anchor the bar program by award-winning cocktail programming manager Emily Yett. A rising talent in the beverage industry, Yett was previously a classic craft cocktail bartender at Herbs and Rye in Las Vegas which was the 2016 Tales of The Cocktail winner for Best American High-Volume Cocktail Bar. At Primrose, Yett brings a lighter, fresher approach to drinking in Las Vegas using herbs and other ingredients grown in the restaurant’s garden.

In collaboration with Paris and New York-based creative studio be-poles, Primrose features an extensive art collection that centers around early 1950’s Provence which captivated artists from around the world for its unmatched light, colors and famed potteries around the area of Vallauris. Each piece in the restaurant celebrates this Golden Age of art which includes five original edition linocuts by Pablo Picasso, a former resident of Vallauris, as well as lithographs by French artists Jean Cocteau and Pierre Boncompain depicting summers in the South of France.

At the heart of the restaurant’s Drawing Room, and reflecting the overall inspiration of Primrose, is a library featuring a diverse selection of vintage and early edition books celebrating topics including the flavors of Provence, impressionist art from the South of France, parks from around the world, and great country estates - many of which were hand-picked from long-time local Las Vegas purveyor Amber Unicorn Books.

Primrose will be a key part of the culinary offering at Park MGM. The restaurant will be managed by Sydell Group, owners and operators of trend-setting boutique lifestyle hotels across the country, each highly regarded for their food & beverage concepts, including The NoMad in New York; The Line in Los Angeles; and Freehand in Miami, Chicago and Los Angeles.

Last spring, MGM Resorts and Sydell Group announced a partnership to reimagine and rebrand Monte Carlo Resort and Casino, to include two distinct new hotel experiences: the launch of Park MGM, and a Las Vegas version of Sydell’s widely acclaimed NoMad Hotel. In addition to fully redesigned and renovated hotel guest rooms, each hotel will feature innovative and exciting food & beverage experiences unique to the Las Vegas market, including the award-winning NoMad restaurant by Chef Daniel Humm and restaurateur Will Guidara and Eataly’s vibrant Italian marketplace. Park MGM and The NoMad Las Vegas become the final pieces of MGM Resorts’ complete neighborhood redesign of the central Las Vegas Strip neighborhood, which began in 2009 with the introduction of CityCenter and the recent unveiling of The Park, a spectacular outdoor dining and entertainment district, and the stunning new T-Mobile Arena.

A rising talent in the beverage industry, Primrose Cocktail Programming Manager Emily Yett previously served as a classic craft cocktail bartender at Herbs and Rye in Las Vegas. During her time at Herbs and Rye, Yett helped its bar program garner the Tales of The Cocktail award for Best American High-Volume Cocktail Bar in 2016. A recent winner of the Speedrack West competition, Yett specializes in classic craft cocktails and is trained in Flair bartending.
