MGM Springfield Unveils Details for Cal Mare Wine Program
SPRINGFIELD, Mass. (August 16, 2018) – Cal Mare at MGM Springfield is ready to wine and dine its guests come August 24. The wine program at the Mediterranean-Italian concept from award-winning Chefs Michael Mina and Adam Sobel will feature Coastal Italian varietals, a tableside limoncello cart and an amaro program.
“The wine offerings at Cal Mare are carefully curated to pair perfectly with the restaurant menu’s coastal flavors,” said MGM Resorts International Executive Director of Beverage Jason Smith. “We’re delighted to bring a variety of wine from across the Pacific Northwest, Italy and France to Western Massachusetts.”
Cal Mare’s menu—comprising fresh seafood, New England staples and handmade pizzas—will pair well with the approximately 90 Coastal Italian and Northwestern U.S. wines and handful of Champagnes. The list is inspired by Old World and New World wine offerings and also will include an impressive selection of amaro, an Italian liqueur most commonly ordered as an after-dinner digestif.
Below are some of the exciting wine offerings guests can expect when the restaurant opens:
- By the Glass: Highlights of the available by-the-glass offerings will include Cala Cala Calabretta, a deliciously dry and mineral wine with notes of lemon curd, pear, and marzipan. The light-bodied Bellus Scopello Frappato from Sicily will be highly aromatic and complementary to the whole grilled fish menu item, featuring strawberry notes mixed with floral undertones.
- By the Bottle: 80 labels will be available to order by the bottle, including the G.B. Burlotto Langhe Sauvignon Blanc Viridis. The fruit-forward wine will brim with lemon, green apple, grapefruit zest and green herbs, highlighting a crisp acidity. The Montepeloso Eneo Sanviovese blend from Tuscany also will be available to order as a bottle. This juicy wine will feature succulent fruit, firm and silky tannins and a fresh finish.
- Amaro Program: The famous class of bittersweet Italian spirits, amaro is traditionally made with brandy and a blend of herbs. Supplementing the wine and seafood, the amaro liqueur will capture the Italian quintessence evident in the ambiance of the restaurant. The menu will feature approximately 20 selections of amaro.
- Tableside Limoncello: Similar to its wine list, Cal Mare’s tableside limoncello program will be hard to find elsewhere in New England. Available in sizes ranging from single-serving portions to small carafes for sharing, house-made flavors—such as the seasonal grapefruit-tarragon and Meyer lemon-verbena—will be available along with Luxardo Limoncello.
