Seafood-focused concept opens, celebrating the best of Maryland & Chesapeake Bay Watershed

December 19, 2016, WASHINGTON, D.C. – José Andrés’ ThinkFoodGroup is thrilled to announce the opening of its newest concept, Fish by José Andrés, at MGM National Harbor. A unique seafood-focused concept from José and his team, this signature restaurant celebrates the best of the Maryland and Chesapeake Bay Watershed, referenced by its playful name which salutes the Mid-Atlantic staple.
 “Fish is a completely new concept that is especially exciting for me as a Maryland resident because it celebrates everything I love about our beautiful and bountiful waterways,” said Chef José Andrés. “When I initially saw our location within the MGM National Harbor property, right above the Potomac River and so close to the Chesapeake, it was obvious that we would serve seafood sourced from this amazing region!”
Overlooking the Potomac from the prow of the spectacular MGM National Harbor, Fish encompasses local favorites like Maryland blue crab and Rappahannock oysters, while incorporating time-honored cooking techniques from around the world through the preparations of dishes such as the Tuna Tartare and Lobster Jambalaya. This winter, guests will have the option to experience the Maryland Fry Bar, and during the warmer months, dine on the outdoor terrace.  
Guests also are able to choose from an array of innovative, hand-crafted cocktails and wines produced in regions known for the world’s best seafood.
Designed by Capella Garcia Arquitectura CGA, Fish is interpreted from a Mediterranean perspective. Diverse artistic pieces located throughout the restaurant transport guests to a nautical universe, from Elena Kalis’ large format photographs of an underwater world, to a lamp formed by a school of fish swirling in a whirlpool, and a large fish sculpture, elegantly illuminated and swimming over the communal tables. There is not one grand dining area, but a variety of dining options including small romantic tables, a private table surrounded by a huge fishing net, and group spaces designed to celebrate special occasions featuring tables with sinuating benches with high backs to evoke marine caves. No matter what experience guests choose to enjoy, rich displays of fresh seafood allow for dinner to be chosen directly from the showcase or tank. Featuring the best of our coastal waters, while paying tribute to their time-honored preparations, this spectacular destination brings you seafood dining in a way that only José Andrés can.
